Tina Danze, a Filipina-American resident of Texas, recently wrote an article about Filipino food for the Dallas News.
“I’m proud that my mom’s cuisine is finally getting its due,” she said, “but I’m feeling a bit sheepish. It’s been too long since I enjoyed a Filipino potluck party. So I invited some relatives and friends to join me in celebrating what could be one of the world’s first fusion cuisines.”
The mouth-watering menu included her cousin Hedy’s kinilaw, which she described as “the Philippines’ answer to ceviche.” Ceviche is a South American dish of marinated raw fish or seafood.
